A gastro pub concentrates on quality food. The name is a combination of pub and gastronomy and was coined in 1991 when David Eyre and Mike Belben took over The Eagle pub in Clerkenwell, London. The concept of a restaurant in a pub reinvigorated both pub culture and British dining.
The Queen Vic aims to provide Houston with a glimpse of our take on the evolution of modern post-colonial British cuisine focusing on Indian flavors. We are a London-style gastro pub with an emphasis on quality chef- driven food, artisanal cocktails, and local and imported beer.
The Queen Vic is transforming an old bar into a gourmet kitchen & pub to serve honest food thoughtfully prepared in a comfortable atmosphere…keeping in the spirit of the British gastro pub.
The Queen Vic was created by owners/ Executive chefs Richard Di Virgilio (Rick) and his wife Shiva.
Goal: To provide the highest quality drafts, drinks, and cocktails. We use the best ingredients, and the finest, sometimes painstaking, methods. The cocktail making process begins every morning. We hand press all of our juices, which are in season. We use local and organic ingredients as often as on perfecting our mixology process. We make all our specialty flavored syrups. From classics cocktails to fresh fruit cocktails, our menu will evolve to create our own unique style. Alongside our cocktails, we have provided a collection of world class; wines, champagnes, and liquors. Beers are hand selected and chosen based on taste, freshness, popularity, and how well it pairs with our food.
At The Queen Vic, we wish to propel our restaurant to new culinary heights. We intend on serving the highest quality foods, creatively prepared, and artistically presented.
We will ensure the utmost freshness in our products by purchasing from local vendors and utilizing organically grown foods, as much as possible. The food leans more on comfort up-market cuisine, that pairs well with drinks. We focus more on beer & cocktails being paired with our cuisine.
We have created a kitchen theme with innovative twists to traditional pub fare, with "Blackboard Specials" rotating on a daily basis. The menu items will draw from both national and international cooking traditions and will remain in harmony with the seasonal availability.
